Here’s just a quick video of an afternoon at the lake, cooking up some fish with only what we had in or pockets.
If you’re going to open roast a fish, leave the skin & scales on, it protects the meat and acts as a cooking surface. The scales and skin will burn and char, and underneath you’re left with perfectly cooked flaky white fish.
